Ingredients
- ½ cup water
- 2 Earl Grey tea bags
- ½ cup sugar
- Roughly cracked or small ice cubes
- 4 ounces fresh lemon juice
- 6 ounces tonic water

Instructions
- In a small saucepan, bring the water to a boil over high heat. Remove the pan from the heat and immediately add the Earl Grey tea bags. Let steep for 6 minutes, then squeeze the water from the teabags and discard. Add the sugar to the saucepan and stir to combine. Set the saucepan over medium-high heat and bring the mixture to a boil. Reduce the heat to low and simmer for 5 minutes, until slightly thickened. Remove from the heat. Allow the syrup to fully cool before using. Store any remaining Earl Grey syrup in an airtight jar in the refrigerator for up to 1 week.
- Fill two highball glasses three-quarters of the way with ice. Add 2 ounces of Earl Grey syrup, 2 ounces lemon juice, and 3 ounces tonic water to each glass. Gently stir to combine. Serve at once.
