Ingredients
- ¼ cup cane sugar
- ¼ cup water
- 24-ounce swing-top bottle
- Oak infusion spiral (see Cook's Note)
- 20 ounces bourbon or rye whiskey
- 4 teaspoons bitters, such as angostura
- Large ice cube
- Maraschino cherry, such as Luxardo
- Orange peel, for garnish

- 2 Rocks or Old-Fashioned glasses
Instructions
- Place the infusion spiral into the swing-top bottle. Add the bourbon, 2¼ ounces of cane sugar syrup, and bitters. Cover and shake well. Place in a cool, dry place for at least 48 hours and up to 1 week, shaking daily and checking for oak flavor. When the cocktail has reached the desired intensity, shake well once more and add a large ice cube to a rocks glass. Pour 2½ ounces of cocktail mixture over the ice in each glass. Garnish with a Luxardo cherry and orange peel. Serve at once.
Cook's Notes
For swing-top bottles, an infusion spiral is the quickest way to get some age into a cocktail. You can also achieve the same aging result with a small barrel. Personal oak aging barrels can easily be found online in a variety of sizes. Just increase the batch size to accommodate the size of your barrel and allow it to rest for 3 to 4 weeks.
