Ingredients

  • 12 blackberries
  • 2 ounces gin
  • 2 ounces Campari
  • 2 ounces dark amaro, such as Cynar, Fernet, Braulio, Averna, dell'Etna (see Cook's Note)
  • Roughly cracked or small ice cubes
  • Large ice cubes, for serving
  • 2 fresh tarragon sprigs, for garnish
  • 6 blackberries, for garnish

  • 2 Rocks or Old-Fashioned glasses

Instructions

  1. In a mixing glass, muddle the blackberries to break them down completely. Add the gin, Campari, and amaro. Fill the mixing glass halfway with ice. Using a long-handled spoon, stir the contents quickly until the spirits are well chilled, about 30 seconds. Place 1 to 2 large ice cubes into two small jars or rocks glasses. Strain and divide the mixture evenly between the two glasses. Garnish each with a tarragon sprig and 3 blackberries. Serve at once.

Cook's Notes

Amaro is an Italian digestif infused with any number of herbs, roots, flowers, bark, spices, and/or citrus peels. While every amaro producer has their own proprietary recipe that can include dozens of ingredients, these liqueurs are usually bittersweet (though some more bracingly bitter than others!) with a syrupy consistency. Here, we recommend a dark amaro for both color and depth of flavor. Try Averna for a more cola-like sweetness or Fernet if you have a taste for black licorice and the ultra-astringent.
