Ingredients
- 16 shortbread cookies, at least 21/2 inches in diameter (see Tips)
- 8 large marshmallows
- 1 4-ounce bittersweet or dark chocolate {=amount1|bar|bars}, broken into eight pieces
- Ground cinnamon
- Cayenne pepper
Instructions
- With the rack about 6 inches below the heating element, heat the broiler.
- Place 8 cookies on a broiler-safe baking sheet and place a marshmallow on each. Broil until the marshmallows are browned and soft, about 45 seconds (they can burn quickly, so watch them closely).
- Remove the baking sheet from the oven and top each marshmallow with a piece of the chocolate and light sprinkles of cinnamon and cayenne. Broil until the chocolate is softened and appears slightly melty, about 15 seconds longer.
- Remove the baking sheet from the oven, top each with another cookie, and serve immediately.
Cook's Notes
In selecting which cookies to use, try to approximate the size (at least 2½ inches in diameter, to help support the squishy marshmallow) and relative thickness (thinner cookies make for a more manageable mouthful) of the graham cracker squares used in standard s'mores.
If you want to strike out into other cookie varieties like butter crunch or butter pecan—both Tate's Bake Shop brand and Pepperidge Farm Farmhouse Thin & Crispy cookies—work well, as does Trader Joe's Belgian Butter Waffle Cookies.
