Ingredients
- 1 -inch piece fresh ginger, peeled and thinly sliced
- 5 ounces honey mead
- 1 ounce orange liqueur, such as Cointreau
- 1 ounce fresh lemon juice
- ½ ounce honey
- 2 large egg whites
- Roughly cracked or small ice cubes
- Honeycomb, for garnish

- 2 Rocks or Old-Fashioned glasses
Instructions
- In a cocktail shaker, muddle the ginger to release the juices. Add the mead, orange liqueur, lemon juice, honey, and egg whites. Cover and shake for 1 minute to emulsify the egg whites. Remove the lid and fill the cocktail shaker halfway with ice. Cover and shake for 30 seconds until chilled. Strain and divide the mixture between two old-fashioned glasses, making sure to evenly distribute the foam. Garnish with honeycomb and serve at once.
Cook's Notes
It's important to shake the ingredients without ice first so that the egg whites can emulsify and give the drink a light and frothy texture. If the liquids are too cold, the egg whites won't fully incorporate.
