Ingredients
- 1.5 ounces fresh lemon juice
- 2 fresh mint sprigs, leaves plucked, plus more sprigs for garnish
- 1 ounce gin
- 1 ounce elderflower liqueur, such as St-Germain
- Roughly cracked or small ice cubes
- Crushed ice, for serving
- Chilled dry sparkling wine, such as Cava, Prosecco, or Champagne, for topping off

- 2 Highball or Collins glasses
Instructions
- Fill a cocktail shaker with the lemon juice and mint leaves. Use a muddler to gently bruise and release the mint's fragrance. Add the gin, elderflower liqueur, and ½ ounce of matcha syrup. Fill halfway with ice, cover, and shake to chill, about 30 seconds. Fill two champagne flutes with crushed ice. Strain and divide the mixture evenly between the two glasses and top with sparkling wine. Garnish each glass with a mint sprig and serve at once.
Cook's Notes
Matcha powder can be found in the coffee and tea aisle of your grocery store or online. Ceremonial-grade, first-harvest matcha has the best quality and will impart the brightest green color, though culinary-grade, second-harvest matcha powder will also work in this recipe.
