Ingredients

  • 1 lemon, washed and sliced into ¼-inch-thick rounds
  • 2 sprigs fresh rosemary
  • 1 teaspoon cumin seeds
  • ½ cup sugar
  • ½ cup apple cider or champagne vinegar
  • Roughly cracked or small ice cubes
  • 8 ounces club soda
  • 2 thinly sliced lemon rounds, for garnish
  • 2 sprigs fresh rosemary, for garnish

Equipment

  • 2 Rocks or Old-Fashioned glasses

Instructions

  1. In a wide-mouth jar or lidded pint container, place the lemon, rosemary, and cumin seeds. Add the sugar and stir to combine, lightly mashing the sugar into the fruit. Cover and allow to macerate for 2 hours. Add the vinegar to the jar and stir to combine. Cover and let rest in a cool, dry place for 3 days, shaking daily. Pass the mixture through a fine-mesh strainer to remove the solids and return it to a clean jar. The shrub may be kept in the refrigerator for several months and will improve in flavor over time.
  2. Fill two rocks glasses three-quarters of the way with ice. Add 1¼ ounces of shrub to each glass and top with 4 ounces of club soda. Stir gently to combine. Garnish with lemon rounds and a rosemary sprig. Serve at once.

Shrubs are a great way to add layers of complexity to any cocktail. Once you know the method, they're easy to customize with whatever flavor profile you desire. Stick to the formula of 1 part sugar, 1 part fruit, 1 part vinegar and experiment to your heart's content!
