Ingredients
- 4 cups water
- ½ cup sugar
- ½ cup fresh lime juice
- 4 Persian cucumbers, ends trimmed, coarsely chopped (about 1 pound) (see Cook's Note)
- 15 fresh mint leaves, plus more for garnish
- Roughly cracked or small ice cubes

- 2 Rocks or Old-Fashioned glasses
Instructions
- In a blender jar, blend 2 cups of the water, the sugar, and lime juice for 30 seconds, or until the sugar has dissolved. Add the cucumbers and mint and blend until smooth. Set a fine-mesh strainer over a pitcher and strain the mixture into it, stirring and lightly pressing on the solids if necessary. Add the remaining 2 cups water to the pitcher and stir with a long-handled spoon to combine. Serve in rocks glasses over ice and garnish with extra mint leaves.
Cook's Notes
Make sure to leave the skins intact on your cucumbers to impart a beautiful green hue on this refreshing drink! Persian cucumbers are thinner skinned, have a lower water content (resulting in more concentrated flavor), and are less astringent than their garden variety cousins. If you can't find them at your local market, English cucumbers will work in their place.
